Vegetarian Frittata Muffins

Hello my dears. Sorry I've been a little absent, but university started back last Monday so I've been a touch busy. After spending the weekend out Ellen's way, cleaning and clearing out, i realized prepared snacks are the way to go. So tonight I decided to make a healthy tasty snack to take to uni, else I'll find myself without food, surrounded by junk, and frustrated (especially because tomorrow is a 6 hour day). So today's recipe is for miniature Vegetarian Frittata's.

Ingredients:
6 whole eggs
4 egg whites
1 yellow capsicum
1 baby red capsicum
1 bunch broccolini
1 large mushroom
1 birds eye chilli
1 handful basil
6 baby tomatoes
1 container of Coles pumpkin, carrot & sweet potato
Salt
Pepper

1. Bake the Coles veges according to instructions on the package
2. Whisk eggs in a bowl
3. Mix vegetables and Coles veges with eggs
4. Divide mixture equally into a muffin tin
5. Bake at 180 degrees celcius until firm and golden on top
6. Makes 12 decent sized frittata muffins

66 calories each
Fat 2.5g
Protein 4.6g
Carbs 4.8g



This is a wonderfully versatile recipe that can be adjusted to suit just about anyone. You can add any vegetable you'd like, fish, tofu, sliced meats, cheese etc. Let me know of your successful adjustments :)

Sweet potato fish cakes

As promised, my sweet potato fish cake recipe! Yum!!



Ingredients:
1 small sweet potato, steamed or boiled, peeled and mashed
1 egg white *
1 tin of salmon, tuna in brine, or a fish fillet of choice (drained of liquid) **
1 tbsp chives, chopped
1 tbsp fresh dill, chopped***
1 tbsp self raising flour ****

*can substitute this egg white with 1 tsp chia seeds in 2 tbsp water (let this stand for 20 minutes) or with an egg replacer like the one from Orgran
**if you do not want to use fish you can substitute this for chicken, 1/4 cup mashed beans (butter beans or red beans work well), tofu or chickpeas (mashed)
***dill is a strong tastng herb that some people dislike, as a subsitute i'd recommend fresh corrander or basil
****you can use coconut flour, almond meal or really any flour, but add 1/4 tsp of baking soda or 1/2 tsp baking powder

Instructions:
1. in a bowl mix the tin of salmon, egg white and herbs.
2. add in the mashed sweet potato and mix well.
3. add the flour and stir well
4. roll into balls and flatten out int small disks (around 6 of them)
5. fry in a pan on low/medium heat for 2 minutes.
6. flip and fry for a further minute.
7. serve with 1 tbsp of Hellmann's light mayonaise, a wedge of lemon, and a sprinkle of dried chilli.
8. enjoy!

Favorite Smoothie Recipes

I have unfortunately misplaced the recipe to the lovely banana bread i made last week, so while i continue to hunt it down i thought maybe you'd appreciate some smoothie recipes. The following are most definitely my favorite, taste and nutrient wise. I hope you enjoy.






Banana berry smoothie

1/2 banana
1/2 cup raspberries (or really any berries you'd like)
2 tbsp goji berries
1 large handful of fresh baby spinach
4 tsp strawberry vitarium
2 tsp natvia
1/2 cup milk
5 ice cubes
1 cup water









Berry twist

1/2 cup frozen raspberries
1/2 cup frozen mango chunks
1 banana
1/2 cup milk (i use Liddells lactose free milk)
1 handfuls of fresh baby spinach
Juice of 1/4 lime
6 ice cubes
1 cup water
Natvia to taste









Berry caramel smoothie

1/2 cup raspberries
1/2 cup blackberries
1/2 tsp caramel essence
1/2 cup milk
1 cup water
6 ice cubes
Natvia to taste








Peach bliss smoothie

3 small overripe peaches, remove seed
1/2 tub Chobani Greek yogurt
1/2 cup milk
1 large passion fruit (more if you want a zingier taste)
6 ice cubes
Natvia to taste
Dash of cinnamon

Paleo Pancakes!

I have recently discovered paleo eating, as you may have gathered from my recent posts, and so i thought i'd share with you my recent paleo pancake experiments. Here are three recipes that i thoroughly enjoyed making as well as eating (hehe). 

Sweet potato pancakes!
Ingredients:
1/2 cup of sweet potato (1 small sweet potato)
2 egg whites
1 tbsp flour
2 tbsp of milk
2 tbsp PB2 (1 tbsp regular peanut butter or nut butter of choice)
Natvia or stevia to taste
1/4 cup of blueberries

1. Boil sweet potato
2. Mash thoroughly until smooth
3. Add other ingredients and mix well
4. Fry in a little oil, butter, or in a non stick pan
5. Enjoy with syrup (i used walden farms maple syrup), honey, yogurt, or any topping of choice (i alternated layers of pancake and microwaves blueberries)





Oat pancakes
Ingredients:
1 tbsp flour
1/2 cup oats
1/4 cup milk
2 egg whites
1/4 tsp vanilla essence
Natvia
2 tbsp PB2

1. Place all ingredients except PB2 in a blender and blend very thoroughly
2. Pour into greased pan and fry
3. Top with PB2 and walden farms maple syrup



Strawberries and cream pancakes (YES THIS HAPPENED)
Ingredients:
1/2 cup oats
2 egg whites
1 tsp baking powder
Natvia
1/2 cup milk
4 tsp strawberry vitarium naturally
2 tsps chia seeds
1/2 cup frozen strawberries

1. The night before: mix oats, milk, chia seeds, vitarium, baking powder and natvia in a bowl or container
2. Leave in the fridge over night covered with cling film
3. In the morning uncover and add egg whites
4. Place in a blender and blend well
5. Fry
6. Top with microwaved frozen strawberries and walden farms maple syrup OR if you are being a little naughty, whipped cream and strawberries

The best thing since sliced bread....

....cauliflower bread that is!

This is a recipe for the most amazing cauliflower buns, and it's so incredibly simple.

Ingredients:
150g raw cauliflower, riced
1 whole egg
1 egg white
2 tbsp chia seeds
Any herbs and spices you like

1. Preheat oven to 180 degrees celcius
2. Mix in a food processor until very well combined
3. form mix into 4 balls and place on baking paper, press down a little
4. Sprinkle buns with sesame seeds
5. Bake for 20 minutes
6. Let cool for 5 minutes
7. Cut open and place patty of choice inside, or perhaps sauce or salad. I made patties out of red kidney beans and basa fish fillets.

Totally divine, super healthy fish cakes

I made the most delicious fish cakes today, and they are so incredibly healthy. Here is the recipe for any of you fish lovers out there.

Ingredients:
1 tin of salmon (or tuna if you prefer)
1/2 small sweet potato
1 small potato
1/2 large zucchini
1 egg white
Herbs of juice
Piri piri flakes (spicy)
1 small spring onion

Instructions:
1. Steam or boil sweet potato, potato and zucchini until soft.
2. Grate zucchini, skin and all.
3. Peal potato and sweet potato and mash with zucchini.
4. Add drained tin of fish
5. Add egg white
6. Add spring onion, chilli flakes and other herbs.
7. Fry in a pan with a little olive/peanut or coconut oil.
8. Enjoy with some tamari sauce (1/2 tbsp tamari + 2 tbsp water + some extra chilli flakes)

Brunch and Beaches

Good day lovely friends, hope you're all enjoying your weekends. It's beautiful sunny here in Sydney, such a splendid thing considering how chilly and grey it's been of late. 

I thought I'd share a few shots from a couple of weekends back. Ellen and I had brunch at a sweet little restaurant at Bondi Beach called Blue Orange. It has such wholesome, fresh, tasty food. Below is my delicious meal of sourdough toast with caramelised onions, roasted pumpkin and chunks of goats cheese, and the most amazing balsamic roast tomatoes. Absolute heaven!


One of my favourite dresses, I refer to it as 
my forest dress. It's from ModCloth, a website
I find very hard to resist. In fact, I recently bought 
incredible dress from there, photos will be up once it
arrives in the mail.

Insane windy weather, utterly freezing too, but at least 
the sun was shining for us.


The glorious Bondi Beach in it's pastel resplendence. 

I can't get over the colours of the ocean, they're just so
inviting and soft. Bondi can go from a deep, almost
black, blue, to a vibrant turquoise. Truly beautiful.

A little photo splurge

Hello my few lovely followers, god it's bee ages since I was on here. I had almost forgotten this blog existed. I figure it's time to share some of my life's most beautiful and inspiring moments with you. Generally for me that means sunsets and trees. I have a fascination with both, and when I get the chance to photograph them I feel happier and more hopeful. I hope you like what I've photographed.

Beautiful Bondi Beach, it's no wonder this 
beach is such a tourist attraction. I did the 
Bondi to Bronte walk, it was a stunningly 
clear day but freezing cold!

Now that I have flooded you with photos I will try my best to update more regularly. I say that often, but I really do mean it. I take sunset/nature photos a few times a week, and I have been crafting quite a bit lately, so there are a fair few posts I can make. Expect a post once a week my loves.

Corlette Adventures

I had the most amazing time this weekend. Port Stephen's is as relaxing and beautiful as i remember it. And i got to hang out with friends i haven't seen in such a long time. The only downside is that my car is still sitting an hour out of Sydney in mechanic shop, waiting to be fixed. But never mind that, here are some snaps of the weekend and my goofy friends.

Sunset in the Park

I have always found sunsets incredibly awe-inspiring. I think they are one of the most beautiful aspects of the world. No matter how often i see them, i still adore them.

The past few nights i have taken the kids i nanny down to the park by their house. It's huge, lush and a great place to kick a ball or go for a swing. I make sure our park visit coincides with the sunset so that i can not only play with the kiddlets, but i can also photograph the sunset. Here are some snaps of tonight expedition.

This is Ben, he was explaining to me how to draw a skeleton,

And this is Bella, attempting to pull the basketball out of a prickly bush.


The sunset was just beginning in this photo. It's my
favorite picture of the night.


Reminds me of caramel oozing from chocolate. 
Just delightful.



I just adore the colours in this one. 
Pinks and purple and yellows and blues. 
The clouds look like fairy floss.




The moon looked like a shooting star because of a strange 
cloud. Quite beautiful, the kids loved it.
